mighty meatloaf
1 1/2 lbs. ground beef

1 russet potato, grated
1/2 onion, minced
6 cloves garlic, crushed
2 tomatoes, seeded and diced

1/2 c. gorgonzola or bleu cheese

1 tsp. marjoram
1 tsp. thyme
1 tsp. rosemary
1 Tbsp. Worcestershire sauce
1 tsp. sea salt
1 Tbsp. cracked black pepper

1/2 c. white wine
more stuff soon-ish

Combine all elements in a large bowl, working thoroughly with hands. Form
into two loaves in large baking dishes. Bake loaves at 350 degrees for 60
minutes, or until browned and crunchy on top

This meatloaf comes out loose and flavorful, avoiding the "gutbomb effect" of
many more traditional recipes. A spectacular update to a classic comfort food.
